Best of the Farmers’ Market Quiche
4-6 oz. cooked nitrate-free bacon
½ cup cooked onion or leeks
½ cup sautéed vegetables (could be any mixture of fresh spinach, red swiss chard, beet greens, asparagus, baby carrot slices, etc.)
5 oz. cheese (cheddar, Colby, or swiss)
3 oz. grated parmesan
4 farm eggs, lightly beaten
1 ½ cups heavy cream or half and half cream
1 9-inch pie crust, unbaked
Preheat oven to 400 degrees
In a medium bowl, mix the bacon, onion, chopped vegetables, and cheeses. Place in an unbaked piecrust. Mix the eggs and cream and pour over the vegetables. Bake in a 4oo-degree oven for 15 minutes and then reduce heat to 350 degrees and bake for 35 minutes, or until quiche is set and begins to brown.
